I made this a couple of days ago and it's really scrummy, slightly sticky and very moreish ;D
8oz self raising flour 4oz caster sugar 1 tsp ground ginger (I use a heaped tsp) 1 tsp bicarbonate of soda 1 egg 7 floz milk 2 oz butter 4 oz golden syrup (1 tbsp is an approx ounce, warm your spoon first as it makes the syrup easier to get off the spoon) Gas 150 degrees C 8" deep sided cake tin (line with greaseproof paper)
Sieve flour, sugar, ginger and bicarb into a large bowl. Melt butter and syrup slowly until melted Beat egg into milk
Slowly pour butter and syrup into flour and stir, this will be thick. Pour in egg and milk mixture until smooth Pour into lined cake tin Bake for 1 hour Allow to cool ....... enjoy ;D
