Originally this was a recipe for Banana Tea Bread that a friend at Uni once brought - we all thought it was amazing.
I have taken this recipe and changed a few bits to make it low fat and better fibre - than for each ritual that we bake it for we customize it - I have included notes on customizing at the end.
200g Brown Flour (Whole Wheat)
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp SALT (I often even use less)
75g of ripe very mashed bananas
1 tablespoon non-hydrogenated veg shortening
100g brown sugar
2 eggs (beaten)
1 lb very mashed fruit (banana, pear, pumpkin etc)
Mix together flour, baking soda, baking powder and salt.
Cream together 75g of bananas, shortening and sugar until relatively smooth and fluffy.
Alternately add eggs and flour stirring well after each addition.
Now add 1 lb of mashed fruit of choice and any remaining flour - mix well.
Place into a greased and floured pan (20.5 x 12.5 loaf tin, or 9" round/square whatever you have to hand where it wont be too thinly spread)
Bake at 180C/350F Gas Mark 4 for at least 1 hr 15 mins - until a sharp knife inserted in the centre comes out clean - mine often takes longer
Cool on rack and keep for 24hrs before serving (this part never happens at my house!)
Other additions: raisins, nuts, chocolate bits, spices (Cinnamon, cloves, mace, ginger and use lots I always double what any recipe calls for)
I would not recommend using soft fruits for this (berries, persimmons etc) as they are too sticky and the cake gets burnt.
