With Yule fast approaching, I wondered what different recipes we all use for mulled wine. Even though I have an intolerance of alcohol, I still have a glass of mulled wine at this time. My favourite recipe is the same as my Father made using Cinnamon, Cloves and Sugar, not forgetting the obligatory red wine. Some I know put Orange juice in but I think this makes it more of a punch. Either way, you can't beat wrapping up warm and going for a Wintry walk with a flask of mulled wine packed in your bag! So, go on, share your secret recipes.
P.s I do sometimes put a spot of black pepper in.

I have my own recipe for mulled wine that I've been making for years.
I make it in a wok, for volume , when having friends round.
The first time I made it, I didn't dilute it at all and everyone was drunk after one glass! ;D It was suggested to dilute it with lemonade but I find water is the best way - why add all that sugar and e numbers unnecessarily?!
For dilution - I use about a pint of water to two bottles of wine but I play it by ear - well by taste, really.
For spices, I add : Cinnamon sticks Cloves Allspice Mace Ginger Nutmeg
Sugar to taste - quite a lot, in my case! ;D
I scoop the wine out with a ladle and strain it into a jug - then I tip the spices in the sieve back into the wok.
Heat is important: very low temperature to make absolutely certain you don't boil off any alcohol or cook the spices too much!
