This is what I did for the gathering, I cheated a little but I didn't have all the stock vegetables or a food processor. So my cheats way is this; 1 smallish pumpkin chopped, peeled & deseeded enough water to cover the pumpkin by an inch 2 vegetable stock cubes 1 tsp of cinnamon 1 tsp of ginger 2 tbsp of full cream milk 2tbsp of double cream
Place pumpkin in pan & add water, bring to the boil then turn down to simmer & add stock. Simmer until soft, add ginger, cinnamon & milk stir in. Remove from heat, get a potato masher & mash up the pumkin in the saucpan with the stock in. Add cream stir in & serve.

I'm going to try that one. But mine was much simpler -
1 onion 1 pumpkin 3 dessert apples 2 vegetable stock cubes boiling water
Fry the onion and pumpkin until onion is soft then add the apple and cook until starting to brown (not too much - just colouring). Then add stock cubes and water (didn't measure that but a couple of pints, I think). Boil then simmer until pumpkin is soft and swizz with one of those hand held mixers (about £5 from Tescos). Salt and black pepper. I eat it with some grated cheese on top (or Brie if you're feeling continental) and if you roast the pumpkin seeds in the oven while you are cooking the soup they are scrumptious on top. Got tons in the freezer coz we had three pumpkins at Samhain. Haven't got fed up of it yet though.

They've got them in Tescos for about a fiver. Really useful for smoothies and soups. Easy to clean and good for small amounts.

O.K. You look like you have a good appetite...... But one of these will easily blend a large saucepan full of soup in a couple of minutes. And they are giving away free fresh soup in the Pallasades today - just got myself two pots of veggie goulash - yummy.

Sam cooked pumpkin soup last year, but we like our chutney to much to waste the pumpkin on soup.
